Course Description

Long before Environmental Studies was a formal discipline, numerous cultures encoded ecological knowledge and values within their cuisines. In the face of ecological imbalances from our gut microbiome to our climate many of these ancestral foods are now being researched and revived as living traditions. In this intensive, hands-on field course, we will study the art of the meal, as a means of enacting and celebrating reciprocal relationships to place.
